Or sometimes.. like it has been for me today, its a very  busy sunday.. getting ready for the next week, laundry.. cleaning the house, entertaining guests..etc etc., and with all of that going on.. you hardly have time to cook something for an afternoon snack.. But that doesnt mean you shouldnt enjoy something delicious.. !! <br /><br />So, for something quick..and something easy.. the theme for November would be <br />"<strong>Fix It</strong>". (Fix something quickly..)<br /><br /><a href="http://pallavi-foodblog.blogspot.com/2008/11/event-sunday-snacks-fix-it.html"><img style="154px;" src="http://2.bp.blogspot.com/_P3ofA3LiKjc/SQ78HrEnltI/AAAAAAAAAj4/zj8lujxXOk8/s200/SundaySnacksFixIt2.jpg" border="0" /></a><br /><br />Whether its for the lazy sunday afternoon or a really busy sunday afternoon.. I'd like to invite you all to bring out your magic wands and whip up some quick and easy sunday snacks.. with hardly any cooking involved.. Sweet or Spicy, hot or cold, veg or non-veg(check rules for more details)...Anything would be ok.. as long as it involves.. zero to hardly any cooking.<br /><br /><span style="bold;">Update:</span> There seems to be some confusion about what type of foods would be eligible for this event. Anything that involves very minimal effort and most of the time is spent just in assembling the dish would be a perfect fit.<br /><br />Here are some guidelines:<br />Definitely <span style="bold;">no deep frying</span> <br />Dry Roasting/Tempering/Seasoning/Warming/Freezing/Refrigerating OK<br />Simple Quick Microwavable dishes OK<br />Simple Quick baking dishes OK<br />Simple Quick Grilling dishes OK<br />If you are using Rice/Couscous/Pasta/Noodles (cooking them with water, thats acceptable - since its minimal effort). Once you are done cooking them though, the rest of the recipe should be just assembly.<br /><br /><span style="bold;">Event Timelines:</span><br />Event will be announced the first sunday of the month and will end on the last sunday of the month.Roundup will be posted the next week.<br /><br /><span style="bold;">Ingredient Restrictions:</span><br />All non-meat stuff is acceptable. Like all other recipes on All Thingz Yummy, please restrict the meats to : Chicken, Shrimp, Lamb/Goat &#38; Fish.<br /><br /><span style="bold;">Multiple Entries/Posting from Archives:</span><br />Anything from archives is ok. 		<description><![CDATA[Jaggery syrup,is a regular side dish at my home. I make it usually for my dear dad, as he is a sugar freek.I prefer him to have jaggery syrup rather than sugar , as this is less harmful than sugar and has iron content in it. Jaggery syrup can be taken by all walks of people, be it old people or little kids.It tastes yummy with Idli or dosa, have it with hot poori I bet you will never touch any other side dish. Very simple to make and you can store it for a week s time. Instead of mixing Sugar with Milk, mix this syrup and give your kids , its Protien with Iron and isnt a pleasure to watch your kid gulp down milk <strong>happily</strong><br /><div><div><div><strong></strong></div><div><strong></strong> </div><div><strong>Ingredients:</strong></div><div>Jaggery - 1 kg</div><div>Elachi - 2 spoons powdered </div><div><strong></strong></div><br /><div><strong>Method:</strong></div><div>Powder jaggery to small lumps and soak them in water for about an hours time. After the jaggery has completly dissolved in water. Strain the jaggery water through a fine strainer or a cloth. This is done to remove any unwanted foreign particles in the syrup. Pour the jaggery water to a wide thick bottomed vessel and bring it to a boil. Add powdered elachi to it and keep on stirring till you get a semi solid kind of syrup. Switch of the flame and let it cool. Store it in a cool dry vessel and make sure they are away from ants . 		<description><![CDATA[Hope all of you had a wonderful weekend! We had a busy Saturday and a laid back Sunday...not bad, eh?<br /><br />The kids have been craving for some prawns for quite a while now. You see , Dinesh is allergic to shellfish and I do like prawns, but not much enough to miss it. But, that's not fair on the kids though, is it? So, now and then, I make it for them to enjoy.<br /><br />Yesterday, I promised Rengoni and Agastya that if they finished their jobs quickly, (namely homework) they would get to help me in preparing some prawns, which I was planning to bake for them. Time passed, and the li'l guy decided it was time for him to throw a bit of tantrum. Both me and Dinesh did not humour him at all. But, I just kept on readying the things for the prawns, making sure he saw it and mentioning every now and then to Rengoni that she needed to go and wash her hands quickly if she wanted to help. Through the corner of my eye, I saw the change of expression in Agastya's face...his face lit up, and at the same time there was a bit of despair. I know how much he loves doing these sort of things, and he must have felt that he needed to mend his ways, and quickly, if he wanted to join in. The whining stopped as soon as he saw Rengoni starting to help me in readying the bowls. His hands were washed, and he was by our side in record time, his ego thoroughly deflated. I didn't say anything ( although couldn't help smiling to myself), but continued as if nothing had happened. No point in adding further salt to injury:-)<br /><br />I had decided to make a very simple appetiser for them. Just mix the prawns with some spices and seasoning, arrange them on cocktail sticks and bake. Both Rengoni and Agastya loved helping to ready them for the oven; especially,  arranging the prawns on the cocktail sticks, and trying to outdo the other at the same time. I quite love the whole experience of cooking with the kids...yes, a little more mess to clean up, but the fun is definitely worth it.<br /><br />Here's how we made the following <span style="font-weight: bold; font-style: italic;">prawn bites</span>-<br /><br /><div style="text-align: center;"><img src="http://i217.photobucket.com/albums/cc99/sunita11/a1-39.jpg" /><br /></div><br /><span style="font-weight: bold; font-style: italic;">What's needed-</span><br /><br />2 C of <span style="font-weight: bold; font-style: italic;">cooked prawns</span><br />1/4 tsp <span style="font-weight: bold; font-style: italic;">turmeric powder</span><br />1/4 tsp <span style="font-weight: bold; font-style: italic;">paprika</span><br />1/2 tsp <span style="font-weight: bold; font-style: italic;">crushed red chillies</span>(more or less)<br />1/2 tsp <span style="font-weight: bold; font-style: italic;">oil</span><br />1 tsp <span style="font-weight: bold; font-style: italic;">ginger-garlic paste</span><br />1 tap <span style="font-weight: bold; font-style: italic;">plain yogurt</span><br /><span style="font-weight: bold; font-style: italic;">salt</span> to taste<br /><br /><span style="font-weight: bold; font-style: italic;">How to-</span><br /><ol><li>Rub the prawns with the rest of the ingredients, cover and keep aside for about an hour.</li><li>Pre heat the oven at 250 deg C. Line and grease well a baking tray.</li><li>Arrange the prawns on cocktail sticks( about 4 on each) and lay them on the prepared tray.</li><li>Place the tray on the top rack of the pre heated oven and bake for about 10-12 minutes. Make sure to turn them frequently.They go from nicely browned to burnt in no time, so watch them like a hawk.</li><li>Serve hot with some salad.</li></ol>That's it! These are really easy to make, and quick too. I used cooked prawns and I am assuming fresh ones would need to be marinated a bit longer, and may take a few more minutes to bake as well.<br /><br /><div style="text-align: center;"><img src="http://i217.photobucket.com/albums/cc99/sunita11/a2-35.jpg" /><br /></div><br />The pictures were taken in quite a hurry, as two eager kids were literally breathing down my neck. 		<description><![CDATA[In Chennai, you can get fresh greens all <span class="blsp-spelling-corrected">through</span> the year at your door step. I have a lady who has been giving me greens for a long time, a very elderly person. She has all the variety of greens according to the seasons they are got. My favourite is <span class="blsp-spelling-error">Aarai</span> <span class="blsp-spelling-error">Keerai</span>. There is a whole lot of things that can be done using <span class="blsp-spelling-error">Aarai</span> <span class="blsp-spelling-error">Keerai</span>. You can make <span class="blsp-spelling-error">poriyal</span>, <span class="blsp-spelling-error">kootu</span>, <span class="blsp-spelling-error">masiyal</span> , <span class="blsp-spelling-error">kulambu</span> with it. Its a very <span class="blsp-spelling-corrected">nutricious </span>and delicious <span class="blsp-spelling-error">keerai</span>.<br /><strong></strong><br /><strong>Ingredients:</strong><br /><span class="blsp-spelling-error">Aarai</span> <span class="blsp-spelling-error">Keerai</span> - Washed and cleaned<br />Green chillies - 2<br />Tomato - 1 small<br />Salt to taste<br />Mustard seeds , <span class="blsp-spelling-error">Urad</span> <span class="blsp-spelling-error">dal</span> and oil for tempering<br /><strong></strong><br /><strong>Method:</strong><br />Wash the <span class="blsp-spelling-error">keerai</span> well and clean them. Remove unwanted leaves in them and again wash them. Washing the <span class="blsp-spelling-error">keerai</span> should be done as follows. Take two wide mouth bowls. Put <span class="blsp-spelling-error">keerai</span> in one bowl and add water to it. Wash the <span class="blsp-spelling-error">keerai</span> and put them in the other empty bowl. Now add water and wash the <span class="blsp-spelling-error">keerai</span> in the <span class="blsp-spelling-corrected">second</span> bowl. Remove the <span class="blsp-spelling-error">keerai</span> to the first bowl and throw away the water. Use fresh water every time you wash. If you watch closely, fine sand will form as a sediment when ever you change the water. This fine sand should be completely eliminated <span class="blsp-spelling-corrected">completely</span>.<br /><a href="http://1.bp.blogspot.com/_yYhakotoGM8/SSEewKANn8I/AAAAAAAAEuU/MIf8KhG7XBg/s1600-h/IMG_1332.jpg"><img style="center" alt="" src="http://1.bp.blogspot.com/_yYhakotoGM8/SSEewKANn8I/AAAAAAAAEuU/MIf8KhG7XBg/s400/IMG_1332.jpg" border="0" /></a>Now in a wide mouth pan, add the <span class="blsp-spelling-error">keerai</span> , along with green chillies, and tomato. Cook well with water till the <span class="blsp-spelling-error">keerai</span> is done completely. Let it cool completely and then put it in a blender and make it a smooth paste. Add crystal salt preferably before you blend it. I always feel crystal salt gives a distinct flavor than the table salt. Maybe this is a just a thought that I got from my mom.<br />Now for the tempering, in a small pan add little oil and when it hot add the mustard seeds followed by <span class="blsp-spelling-error">Urad</span> <span class="blsp-spelling-error">dal</span>. Pour it over the <span class="blsp-spelling-error">keerai</span> <span class="blsp-spelling-error">masiyal</span> and stir well. Healthy <span class="blsp-spelling-error">Keerai</span> <span class="blsp-spelling-error">Masiyal</span> ready. I love to mix rice with this and eat it just without any side dish. 		<description><![CDATA[Though I collect dishes-to-cook-over-weekend all through the week, come Sunday and I am too lazy to do anything much. I hate myself for that cuz I am letting all the lovely natural light go away when I could cook something new and photograph it!<br /><br /><a href="http://farm4.static.flickr.com/3061/2994100559_8ca4eaffd5.jpg?v=0"><img style="500px;" src="http://farm4.static.flickr.com/3061/2994100559_8ca4eaffd5.jpg?v=0" alt="" border="0" /></a><br />Anyway, on this particular Sunday that I made the peas pulao, I was too lazy to make a side-dish with the paneer I had so I added it to the pulao! The light was just too perfect for me to pass on taking food pics. No harm done and so much time saved, right? Well, TH would have still preferred <a href="http://www.cookingandme.com/2008/07/palak-paneercottage-cheese-in-spinach.html">Palak Paneer</a> to go with the peas pulao but when one's wife is lazy occasionally, one can't complain too much, right? ;)<br /><br /><span><span style="bold;"></span><blockquote><span style="bold;">What I Used:</span><br /><br />Basmati rice - 1 1/2 cups<br />Onion  - 1, chopped fine<br />Green peas - 1/2 cup<br />Paneer cubes - 1/2 cup<br />Green chillies - 3<br />Ginger garlic paste - 1.5 tbsp<br />Cumin / jeera / jeerakam seeds - 1 tsp<br />Whole black pepper - 1/2 tsp<br />Cloves - 4<br />Cardamom - 2<br />Cinnamon stick - a 1″ piece<br />Bay leaves - 1<br />Ghee / Clarified butter (or veg oil) - 2 tbsp<br />Salt to taste</blockquote><span style="bold;"></span><blockquote><span style="bold;">How I Made It:</span><br /><br />1. Soak the basmati rice in enough water to cover it, for 15 mins. Meanwile, grind the pepper, cloves, cardamom and cinnamon together. If you have a pestle and mortar, that will be best.<br /><br />2. Heat the ghee in a pan and throw in the cumin seeds. Once they splutter, add the ground ingredients. Tear the bay leaf into 3 and add toss that in too.<br /><br />3. Now add the onions, split green chillies and saute until onions turn transparent.<br /><br />4. Then add the ginger garlic paste and saute well for a minute.<br /><br />5. Add the peas and paneer cubes and mix well for another 2-3 mins.<br /><br />6. Drain the rice completely and add to the pan. Mix thoroughly.<br /><br />6. Add 2 cups water to the above and let it cook until the rice is done. Alternately, you can add equal ratio of water (1.5 cups rice : 1.5 cups water) and pressure cook for one whistle. Once the pressure leaves, open lid immediately and transfer to another bowl.<br /><br />7. Garnish with coriander leaves and serve with side-dish of choice.</blockquote>I was too lazy that Sunday which is why instead of using up the paneer to make a side dish, I added it to the peas pulaoa and served it with just cucumber raita and pickle ;)<br /><br /></span>

When were small, one of my neighbourhood aunt made sambhar like this with addition of some more vegetables. It tasted great. So when I saw this in her blog, thought of making this. I have not followed her recipe. As usual some editing in original recipe. But one thing for sure add any number of spices or cook any way this yellow dal and mix vegetables combination will ROCK :D.</span><br /><span style="font-family:trebuchet ms;"><br /><strong>Ingredients: Sufficient for 2-3 people</strong><br /><br />1 Cup yellow lentil (tuvar dal)<br />2 Cup mixed vegetables like, cauliflower florets, french beans cut in small pieces, sliced carrots,green peas)<br />1 Big onion chopped finely<br />1 Tsp ginger-garlic paste<br />1 Medium sized tomato chopped finely<br />1 Tsp cumin seeds<br />1/2 Tsp mustard seeds<br />2 Pinch of asafoetida<br />1/2 Tsp turmeric powder<br />1 green chillies chopped finely<br />1/2 Tsp red chili powder<br />1 Tsp lemon juice<br />Salt to taste<br />Oil for cooking<br />2 tbsp chopped coriander leaves for garnishing<br /><br /><strong>Method:</strong> Mix 1/2 tsp of turmeric powder &#38; 1 tsp salt and pressure cook the yellow lentil with 2 cups of water. One whistle is enough to cook that, as we dont want it too mushy initially. Keep this aside till other things are ready.<br />Boil all the vegetables for 10-15 min. Drain all the water and keep them aside too.<br /><img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 525px; CURSOR: hand; TEXT-ALIGN: center" alt="Photobucket" src="http://i260.photobucket.com/albums/ii29/bhawana_2008/dal2copy.jpg" border="0" /><br />Heat oil in a pan and add the cumin seeds, mustard seeds and asafoetida. Let it splutter and then add chopped onion. Stir it till onion changes its color, add ginger-garlic paste, chopped green chilies and tomatos. Cook this just for 3-4 min. Tomato's should not be mushy. Some people dont like tomatos half cooked, those can cook this until tomato's become mushy and starts leaving oil in the corner of the pan. To this add red chili powder and mix well. Now add all boiled vegetables and stir for few seconds, lastly add boiled yellow lentil and mix well. Adjust water as per your choice how much watery you want this curry. I added 1 cup of water. Adjust salt as per taste and add lemon juice. Mix well and cook on low flame for 2-3 min covering the lid. So that vegetables can soak spices flavour. Well outcome was good but I feel somehow I should not be added egg. So I will try without using egg and then will update how will that make difference.</span><br /><span style="font-family:trebuchet ms;"></span><br /><span style="font-family:trebuchet ms;"><strong>Ingredients: 18-20 Cookies</strong></span><br /><span style="font-family:trebuchet ms;"></span><br /><span style="font-family:trebuchet ms;">1 Cup cashews coarsely ground</span><br /><span style="font-family:trebuchet ms;">3 Tblsp semolina</span><br /><span style="font-family:trebuchet ms;">1/2 Cup all purpose flour</span><br /><span style="font-family:trebuchet ms;">1/4 Tsp baking soda</span><br /><span style="font-family:trebuchet ms;">1 Egg</span><br /><span style="font-family:trebuchet ms;">2.5 Tblsp unsalted butter</span><br /><span style="font-family:trebuchet ms;">3 Tblsp light brown sugar</span><br /><span style="font-family:trebuchet ms;">8-9 Cashew nuts halved for garnishing</span><br /><img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 525px; CURSOR: hand; TEXT-ALIGN: center" alt="Photobucket" src="http://i260.photobucket.com/albums/ii29/bhawana_2008/cashewcookies3.jpg" border="0" /><br /><span style="font-family:trebuchet ms;"><strong>Method:</strong> Pre heat the oven at 160C. Sift the flour and soda into the bowl and mix well. To this add semolina and ground cashews and mix well. Beat egg in a bowl. To this add brown sugar and unsalted butter. Mix well and add all dry ingredients. Dont over knead/mix.<br />Pour half a spoon mixture on greased baking tray and flatten that with the help of fingers to make a small circle. Press a halved cashew on top of each cookie and bake in the centre of the oven for 10-12 minutes or till golden around the edges. Here is the recipe.<img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 525px; CURSOR: hand; TEXT-ALIGN: center" alt="Photobucket" src="http://i260.photobucket.com/albums/ii29/bhawana_2008/1rasmalai.jpg" border="0" /></span><br /><span style="font-family:trebuchet ms;"></span><br /><strong><span style="font-family:trebuchet ms;">Ingredients: Will Make 16 Squares of Rasmalai</span></strong><br /><br /><span style="font-family:trebuchet ms;">425 Gram ricotta Cheese</span><br /><span style="font-family:trebuchet ms;">3 Tblsp Sugar</span><br /><span style="font-family:trebuchet ms;">5 Cup milk</span><br /><span style="font-family:trebuchet ms;">3 Tblsp chopped almond and pistachios</span><br /><span style="font-family:trebuchet ms;">5-6 Cardamom</span><br /><span style="font-family:trebuchet ms;">2 Tblsp condensed milk</span><br /><span style="font-family:trebuchet ms;">3-5 Threads of saffron</span><br /><br /><span style="font-family:trebuchet ms;"><strong>Method:</strong> Preheat oven to 350F. Mix ricotta cheese and sugar with the help of hand blender properly. Pour this mixture in a greased baking tray and bake for about 35 min. Here I think just baking for 35 min will be suffice to make cheese firm after cooling down.<br />Allow it to cool for 30 min before cutting into squares.<br />Boil the milk in a heavy bottom pan till milk becomes almost 3 cups. Add the dry fruits, condensed milk, cardamom, and saffron. Allow it to cool for sometime and then keep in the fridge.Pour the milk over the cut squares of cheese, and let it soak for at least an hour before serving.<img style="DISPLAY: block; MARGIN: 0px auto 10px; 		<description><![CDATA[<div style="justify;">The Santa Ana winds was blowing yesterday and it was so hot to be out doors. Decided to stay home and catch up on things. With lunch to prepare I was thinking of what to serve. Ever since I had aloo paratha at the Indian Diwali Mela in San Diego last week I was thinking of making some soon. But then when I opened the fridge I saw this huge bag of broccoli looking at me and decided to experiment with them to make a paratha. On mentioning it to my husband he told me that it would not taste good as the veggie has an after taste, but he was ready to try. I followed the ground rules for making the paratha and what turned out was a very delicious spicy paratha that made me want to blog about it. If you are wondering if it was that good I invite you to try them and believe me it might be your favorite soon.
